Ingredients - serves 4:
450g (1lb.) tomatoes, washed and sliced.
1 small onion, skinned and sliced.
1 small green pepper, sliced with seeds and membrane removed.
1 clove of garlic, skinned and crushed.
1 tablespoon of olive oil.
1 tablespoon of wine vinegar.
2 tablespoons of lemon juice.
1/4 of a cucumber, peeled and diced.
salt and pepper.
toasted wholemeal croutons (optional).
Cooking instructions:
Place the tomatoes, garlic onion vinegar and olive oil in an electric blender and combine well together.
Turn the mixture into a basin and add the lemon juice and season to taste.
Chill in a refrigerator before serving with (optional) toasted wholemeal croutons.
